Dairy or Parve*
Ingredients:
2 Bunches Kale (about 1 bag), chopped with stems removed
1/2 Cup Dried Cranberries
1/3 Cup Pine Nuts
1 Oz. Feta (Optional)*
Olive Oil and Salt for Massaging Kale
Dressing Ingredients:
1 Shallot, minced
1/4 Cup Rice Vinegar
1 Tablespoon Miso Paste
1 Tablespoon Pure Maple Syrup (may substitute Honey)
2 Teaspoons Dijon
Instructions:
Pour Rice Vinegar over Shallot. Set aside and allow to soften.
In a large bowl, drizzle about 1-2 Tb. Olive Oil over Kale. Add a pinch of salt. To massage the Kale, simply squeeze with your hands until the Kale is uniformly dark green and wilted. The volume should decrease significantly. (About 3 minutes)
Once Kale is thoroughly massaged, finish the dressing. Add the remaining dressing ingredients to the Shallot and Vinegar and mix until well combined. Pour Dressing over Kale. Add Cranberries, Pine Nuts and Feta. Adjust salt to taste.
*Omit Feta for a Parve Salad
