Ingredients:
6 Oz. Baby Spinach, roughly chopped
2 Cups Cherry Tomatoes, cut into halves or quarters
1 Can Artichoke Hearts, chopped
1 Avocado, diced
Dressing Ingredients:
1 Tablespoon Extra Virgin Olive Oil
1 Tablespoon Balsamic Vinegar
Salt and Pepper, to taste
Instructions:
Combine Salad ingredients in a large bowl. Toss with Olive Oil, Balsamic Vinegar, Salt and Pepper. Adjust dressing ingredients to taste.
NB: For a variation on this salad, add hard boiled egg whites, walnuts and a pinch of turmeric.
