Dairy or Parve*
Ingredients:
8-10 Cups Mixed Greens
1 Eggplant, diced
2 Cups Cucumber, diced (about 4 Persian Cucumbers)
3 Scallions, chopped
1/2 Cup Chopped Walnuts
1 Avocado, diced
1/3 Cup Feta (Optional)*
Olive Oil and Salt for Sauteing
Dressing Ingredients:
1 Tablespoon Extra Virgin Olive Oil
1 Tablespoon Red Wine Vinegar
Salt and Pepper, to taste
Instructions:
Heat Olive Oil in a saute pan. Add eggplant and sprinkle with salt. Saute until the eggplant is soft and a bit charred. Allow to cool.
Combine salad ingredients in a large bowl. Toss with Olive Oil, Red Wine Vinegar, Salt and Pepper. Adjust dressing ingredients to taste.
*Omit Feta for a Parve salad
